Wartime Economy Book of Recipes for 1945: Published on April 10, 1945 by the Halifax Herald. The recipes were “selected from more than 8000 Maritime recipes” submitted for consideration. Over three hundred different communities from the three Maritime Provinces participated. On pages 12 is a recipe submitted by Mrs. Lillian Martin, Necum Teuch.
1/2 small cabbage (grated) or shredded fine.
4 apples (grated)
1 cup carrots (grated)
4 hard-boiled eggs, sliced.
Dressing: 1 cup sweet cream, 1/2 cup vinegar, 1/2 teaspoon salt, 1 tablespoon sugar.
Reserve half of the grated carrots.
Method: Now mix the cabbage, apples and half of the carrots. Toss altogether and chill. Lastly add dressing, put in salad bowl with other half of carrots on top in centre. Slice the eggs, put around edge of slaw. Place mayonnaise on top, dust with paprika.
